I forgot to mention that I celebrated a birthday a few weeks back. I turned 28 two Tuesdays ago and it was a wonderful day filled with sunshine and lots of pampering in the evening from my husband.
The main event was dinner, as is the case with most of our celebrations. Because my birthday is exactly one week after our anniversary, for the past two years we have decided to go out for one occasion and stay in for the other. So far that has meant Garrett cooking dinner for me on my birthday, and both years have included lobster! Maybe we can make that a tradition!
After cocktails on the terrace – a Belgian brew for him, a sparkling water and juice concoction for me (ps – having a virgin cocktail in a large wine glass with lots of ice and a squeeze of lime is just like having a grown up cocktail… almost.) Garrett then got to work on the best lobster risotto ever. Seriously, better than anything I’ve had in a restaurant in a loooong time. I don’t think he wavered much from the recipe, except adding only half the amount of brandy and using two, already cooked, baby lobsters from the market. We had enough left over for the next night’s dinner too. It was amaaaaazing.
Oh, I should also mention that this was not Garrett’s first go around with risotto. It’s kind of “his thing” (I’ve never made it once) and he’s made a few different variations in the past. This time, however, he used homemade chicken stock and he SWEARS it made all the difference in the flavor of the risotto. It was pretty excellent, and the best he’s ever made. So there’s that.
Carrot cake cupcakes to end the night, because he knows cream cheese frosting is my favorite… The verdict there is that Garrett might not be a baker quite yet :/ but he gets an A+ for the effort.
And really, who needs a perfect cupcake after perfect risotto filled with LOBSTER!
